Salad Recipes: Salade Nicoise

Salade Nicoise

A salad doesn't always have to be a side dish. This salad is very rich in ingredients, it contains tuna, eggs and all kind of delicious vegetables so you can easily serve it as a main course. Since a supermom is always looking for an easy way out during dinner meals, this salad recipe could do the trick; It's easy, quick and healthy.

Preparation time: 45 minutes
Cooking time: 5 minutes

Ingredients:
  • 1 medium red onion
  • 3 large plum tomatoes
  • 1 boiled, cubed large potato
  • 3 celery sticks
  • 3 hard-boiled eggs
  • 250g green beans
  • 1 can (400g) tuna in oil
  • 50g black olives
  • 50g green olives
  • 2 tablespoons baby capers
  • 2 tablespoons shredded basil leaves

For the dressing:
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic, crushed
  • 1 teaspoon sugar

Directions
  1. Cut the onions in quarter, slicing it thinly. 
  2. Cut tomatoes into thin wedges.
  3. Slice the celery.
  4. Quarter the eggs.
  5. Steam green beans until tender ( steaming helps keep all the nutrients).
  6. Drain the tuna and slice the pitted olives.
  7. Place the ingredients in a dish of your choice, shower them with the delicious lemon juice sauce and sprinkle the basil on top.

Green Salad


Ingredients


  • 10 leaves Romain Lettuce, shredded
  • 3 Lebanese cucumbers, sliced
  • 1 green pepper or capsicum, sliced
  • 1 bunch of Rocket leaves
  • 1 bunch of fresh Thyme

 Mustard Dressing:
  • 1/4 cup regular mustard
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tsp oregano
  • pinch of salt
  • black pepper to taste

Directions


Toss all the salad ingredients together, add the dressing and serve immediately.

Thyme & Tomato Salad

A Delicious & Refreshing Lebanese Salad!

Ingredients

1 bunch of fresh thyme
2 medium tomatoes, sliced
1 small white onion, chopped
1/4 cup olive oil
4 tbsp lemon juice
salt and pepper to taste

Directions

Wash the fresh thyme well, toss all the ingredients together and Bon Appétit!

Lettuce, Bulgarian Cheese and Walnuts Salad

This Salad is so refreshing during summer. The taste of orange and mustard dressing coating the cheese is Superb!

Preparation Time: 20 minutes


Ingredients


1 small romain lettuce
150 g Bulgarian Cheese
50 g chopped Walnuts
Dressing: Mustardy Orange Dressing

Directions


Shred the lettuce into large pieces. Don't use the knife, the lettuce will loose all its nutrients. Shred the leaves with your hands.
Put the lettuce in a serving dish, and crumble the cheese all over the leaves.
Spread the chopped walnuts, add the dressing and toss all together.

Tips

          - After washing the lettuce, let them stand in water, vinegar and salt for
            5 minutes.
          - Chill the salad before serving
          - Always choose Romain lettuce for your salads.
          Romain lettuce is a highly nutritious leafy green it contains, per head,
          17% protein, 206 mg calcium, 44% RDA of Omega-3, more Vitamin C
          than an orange, 6 mg of iron, rich in Vitamin B, Water, Vitamin A,
          mineral rich.

Mustardy Orange Dressing


A light tasty dressing!


Ingredients

1 cup orange juice
2 tbsps Mustard
Ground black pepper to taste
Salt to taste

Garden Salad


Ingredients

5 leaves romain lettuce
5 leaves lollo rosso
2 medium carrots, grated
20 cherry tomatoes, halved
3 lebanese cucumbers
Black ground pepper to taste
Salt to taste
Dressing: Sauce Maison


Directions


Shred the lettuce with your hands, this way it won't loose any of its vitamins.
Cut cucumbers into round slices
Toss all the ingredients together

Cabbage and Tomatoes Salad

Preparation Time: 15 minutes
Serves 4

Ingredients

1 small cabbage
2 medium tomatoes
2 tbsp fresh parsley
1/2 tbsp dried mint

Dressing: Sauce Maison

Directions

  • Finely chop the cabbage
  • Slice the tomatoes into a julienne cut( long thin cut)
  • Add the fresh parsley
  • Add the dried mint
  • Pour the dressing and toss all together

Recipe: Salad Dressings

SuperMom Italian Dressing:

  • 1 cup vinegar
  • 1 1/3 cup olive oil
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1/2 tbsp white sugar
  • 1 tbsp oregano
  • 1/2 tsp black pepper
  • 1/4 tsp thyme
  • 1/2 tsp dried basil
  • 1 1/2 tsp salt

SuperMom Greek Dressing

  • 1/3 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 3/4 tsp pepper
  • 3/4 tsp salt
  • 3/4 tsp onion powder
  • 3/4 tsp Dijon-style mustard
  • 1/2 cup red wine vinegar


SuperMom Balsamic Vinaigrette

  • 1/2 cup extra virgin olive oil
  • 1/2 cup white balsamic vinegat
  • 1 clove crushed garlic
  • 1 tsp ground mustard
  • 1 pinch salt
  • ground black pepper to taste

SuperMom Guilt-Free Dressing

  • 1/2 cup fat-free yogurt
  • 1 tsp dried mint
  • 1 tsp dried oregano
  • pinch of salt
  • black pepper to taste

  • 1/4 cup regular mustard

  • 1/4 cup olive oil
  • 1 tsp oregano

Recipe: Farfalle Pizza Salad

Farfalle Pizza Salad

 

 Kids will love it!!


Ingredients


100g uncooked coloured farfalle, boiled and cooled
150g sliced turkey, chopped
150g shredded cooked mozzarella
50 g pitted black olives, chopped
50 g pitted green olives, chopped
4 small tomatoes, seeded and cubed
10 leaves of romain lettuce
10 g parmesan
Supermom Italian dressing
For the decoration: 1 quartered tomato, 5 pitted black olives, 4 turkey rolls, 5 pieces of farfalle. 

Mix all the ingredients, cool and serve.
