Christmas Recipes: German Potato Salad


Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients

5 eggs, boiled and halved
4 bacon rashers, chopped
1 kg tiny new potatoes, boiled and halved
2 pickled gherkins chopped finely
2 tbsp finely chopped parsley

Lemon Mayo Dressing
1 cup Mayonnaise
1/4 cup lemon juice
Salt and pepper to taste

Directions

Toss all ingredients together and serve hot.

Christmas Recipes: Beetroot Salad

Beetroot Salad

This is an easy and fresh salad that will make an excellent new dish for Christmas.


Preparation Time: 25 minutes
Cooking Time: 45 minutes

Ingredients

1 kg Beetroot, boiled and cubed.
1 kg potatoes, boiled and cubed.
1 cup fresh peas, boiled
1 small red onion, finely chopped

Lemon Mayo Dressing

1 cup mayo
1/4 cup lemon juice
Salt and pepper to taste

Directions

Toss all ingredients together and serve chilled.

I don't like my meals to be predictable, that is why I do my best to renew the menu on every Christmas. This salad was brought by one of my best friends last Christmas and it was tasty. Hope you will try it.

Spinach and Eggs Salad


Serves 3
Preparation Time: 20 mns

Ingredients

500 g young spinach
1 large red onion, sliced into rings
3 hard-boiled eggs, cut in half
100g pitted, halved black olives
200g chopped fresh mushrooms

Dressing

1/4 cup lemon juice
1/8 cup white vinegar
1/4 cup garlic olive oil
Black Pepper and Salt to taste

Directions

You can either toss all the ingredients together and serve, or start by decorating your serving plate with the young spinach leaves to form a large flower and place the onions, eggs and olives in between the leaves as shown in the picture and the dressing can be served on the side.

Fusilli Pesto Salad



After I put my kids to bed, I was watching Everybody Loves Raymond and felt in the mood for something lite and quick so I opened my fridge and found some fusilli pesto left overs, I threw some more ingredients and made this delicious salad. Try it and tell me if you will like it. Personally, I enjoyed it so much while watching "The cult" have you seen it? It is a very funny episode, the first from the season 7. Let's make our salad, shall we?

Ingredients

5 Romain Lettuce Leaves
Fusilli Pesto Left over
1 cup corn kernels
1 grated carrot
1 roughly diced tomato
1 tbsp grated Parmesan

Directions

Toss all the ingredients together and choose a dressing of your choice. I chose the sauce maison because I wanted something lite tonight. Check out this dressing page and choose the one you like

Lebanese Potato Salad

Lebanese potato salad

Delicious and Refreshing

Ingredients


1 kg potatoes, boiled, peeled and largely diced
1 medium white onion, finely chopped
1 bunch spring onions, sliced
4 sprigs of fresh mint
1 tsp dried thyme
Dressing: Sauce Maison

Directions


Toss all ingredients together and Bon Appétit!

Potato and Crab Salad

Ingredients


6 small russet potatoes
3 hard-cooked eggs, chopped
400g processed crab meat, sliced
200g sliced, pitted black olives
1/2 carrot, grated
3/4 cup light mayo
1 tbsp white vinegar
1 tsp lemon juice
1/4 tsp garlic powder
1/4 tsp dried dill
1/4 tsp dried basil
1/4 tsp oregano

Directions


Place potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook over medium-heat for 30 mns, or until tender. Drain, peel and dice while still hot. This is what will make the salad fluffy. Cover and refrigerate until cold.

in a large serving bowl, toss together the potatoes, eggs, crab meat, black olives and carrot. Chill until ready to serve.
